A first for White Castle Vineyard, Wales, and the UK - our 2023 vintage Cabernet Franc
Sparkling Rosé has exceeded all expectations. This complex Rosé reveals a vivid rouge hue
Style: Elegant Brut, traditionally made sparkling wine
Nose: inviting Strawberry Aromas
Palette: On the palate, it offers a clean, crisp profile with vibrant flavours of wild forest berries, culminating in a luxurious creamy mouthfeel
Food Pairing:
Sparkling wine tends to go very well with appetizers. It also goes well with fish and very light meals, and of course as an after-dinner celebration or toast.
Serve chilled.
Wine making:
The grapes were hand harvested in 2023 and the juice fermented in stainless steel vats. In 2024 we inoculated the wine with a small amount of yeast and sugar to induce the secondary fermentation and bottled. The best Champagnes and Sparkling wines are made by méthod champenoise which requires a secondary fermentation in the bottle. The wine continued to sit on the lees for a further 18 months before being disgorged.£38.11
